Wild & White Rice Salad

Ingredients
Dressing
- 3 tbsp olive oil
- 3 tbsp orange juice
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 tsp fresh thyme leaves
- Salt and pepper, to taste
Salad
- 1 cup long grain and wild rice
- 2 cups water
- 2 celery ribs, diced
- ½ red onion, diced
- ¼ cup fresh parsley
- ¼ cup dried cranberries
Instructions
- Cook the long grain and wild rice according to package directions. Allow it to cool completely.
- In a small bowl, whisk together the dressing ingredients. Set it aside.
- In a large mixing bowl, toss together the white rice, wild rice, celery, red onion, parsley, dried cranberries, and the dressing.
- Serve immediately or store in the refrigerator for up to 5 days.
