Vegetarian Lettuce Wraps

Ingredients
Filling
- 1 tsp vegetable oil
- 1 cup cremini mushrooms
- ½ yellow onion, finely diced
- 8 oz extra-firm tofu
- 2 garlic cloves, minced
- 2 tsp fresh ginger
- 2 tbsp hoisin sauce
- 1 tbsp tamari
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp red pepper flakes
Wrap
- 6 bibb lettuce leaves
- 1 green onion, sliced
- 1 carrot, shredded
- ¼ tsp sesame seeds
Instructions
- In a large pan, heat the oil over medium-high heat. Add the onions and mushrooms and cook until they soften, about 2 to 3 minutes. Add the tofu and cook, stirring occasionally, for another 5 minutes. Add the garlic and ginger and cook until they become fragrant, about 30 seconds. Add the hoisin sauce, soy sauce, rice vinegar, sesame oil and red pepper flakes. Mix well.
- To assemble the wraps, spoon the tofu mixture into the lettuce leaves and top with the carrot, green onion, and sesame seeds.
- Serve immediately.
