Vegan Tofu Scramble

Ingredients
- 1 tbsp olive oil
- ½ red bell pepper, finely diced
- ¼ cup broccoli florets
- 4 oz extra-firm tofu, crumbled
- ½ tsp ground turmeric
- ½ tsp garlic powder
- ⅛ tsp red pepper flakes
- 1 tsp soy sauce
- 1 green onion, sliced
- Salt and pepper, to taste
Instructions
- In a large skillet, heat the oil over medium-high heat. Add the red pepper and broccoli. Cook until the red pepper starts to soften, about 1 to 2 minutes. Add the tofu, turmeric, garlic powder and red pepper flakes. Season with the soy sauce. Cook until the vegetables have softened and excess liquid from tofu has been released, about 2 to 3 minutes.
- Serve immediately topped with the green onion or store in the refrigerator for up to 5 days.
