Ingredients
- 2 cups green kale, finely chopped
- 2 tbsp balsamic vinaigrette
- ½ cup red cabbage
- ½ sweet potato, peeled and roasted
- ¼ 15-oz can chickpeas, drained and rinsed
- ½ cup cooked quinoa
- ¼ cup chopped roasted almonds
Instructions
- Massage the kale with 1 tablespoon of the balsamic vinaigrette. Arrange the kale and the remaing ingredients in a serving bowl and toss with the remaining vinaigrette.
- Serve immediately or store in the refrigerator for up to 3 days.
