Tomato Spinach Mini Fritattas

Ingredients
- 6 large eggs
- 2 tbsp milk
- ½ tsp garlic powder
- Salt and pepper, to taste
- 1 cup baby spinach
- 1 cup cherry tomatoes
- ½ cup crumbled goat cheese
Instructions
- Preheat the oven to 375°F. Grease a muffin tin with oil or cooking spray. Set it aside.
- In a large measuring cup, whisk together eggs, milk, garlic powder, salt and pepper. Set aside.
- Fill each muffin cup with chopped spinach, tomatoes and goat cheese. Pour the egg mixture into each muffin cup. Bake until the eggs have set, about 15 to 20 minutes.
- Serve immediately or store in the refrigerator for up to 3 days.
