Thai Mango Salad

Ingredients
- 1 mango, pitted and julienned
- 1 red bell pepper, julienned
- 2 carrots, peeled and julienned
- 2 green onions, sliced
- ¼ cup chopped peanuts
- 1 lime, juice
- 1 tsp honey
- ½ tsp fresh ginger
- red pepper flakes, to taste
Instructions
- Combine the mango, red bell pepper, carrots, green onion and crushed peanuts in a large bowl. In a small bowl, whisk lime juice, honey, ginger and red pepper flakes. Pour dressing over salad and mix well.
- Serve immediately or store in the refrigerator for up to 5 days.
