Spring Peas & Mint

Ingredients
- 1 tsp olive oil
- 2 green onions, sliced
- 3 cups spring peas, fresh or frozen
- 1 tbsp fresh mint
- ½ cup water
- ½ lemon, juice
- Salt and pepper, to taste
Instructions
- In a medium saucepan, heat the oil over medium-high heat. Add the green onions and cook until they have slightly softened. Add the peas and water and cook until peas have softened and warmed through, about 2 minutes. Remove them from the heat and add the mint, a squeeze of lemon juice, salt, and pepper.
- Serve immediately or store in the refrigerator for up to 3 days.
