Spicy Pineapple Chicken Kebabs

Ingredients
Marinade
- ½ cup pineapple juice
- ¼ cup soy sauce
- 1 tsp fresh ginger
- 2 tsp sriracha sauce
- ¼ tsp red pepper flakes
Kebabs
- 2 cups pineapple
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 2 boneless skinless chicken breasts, cut into ¾ inch cubes
Instructions
- In a medium bowl, combine pineapple juice, soy sauce, ginger, red pepper flakes and sriracha. Add chicken and toss to coat. Cover and refrigerate for at least an hour or overnight. Soak your skewers for at least 30 minutes before building your kebabs. Using two skewers per kebab, alternate chicken, pineapple, bell pepper and onions. Discard marinade. Grill on medium heat until chicken reaches an internal temperature of 165°F.
- Serve immediately or store in the refrigerator for up to 3 days.
