Spicy Chicken Noodle Soup

Ingredients
- 1 tbsp oil
- 1 yellow onion, thinly sliced
- 2 garlic cloves, minced
- 2 red bell peppers, thinly sliced
- 2 tsp fresh ginger
- 2 tbsp red curry paste
- 2 red chili peppers, thinly sliced (optional)
- 4 cups chicken broth
- 1 cup light coconut milk
- 1 tbsp fish sauce
- 2 cups shredded cooked chicken
- 2 instant ramen noodles, seasoning packets discarded
- 2 tbsp fresh cilantro
- 1 lime, zest and juice
- 2 green onions, sliced for serving
Instructions
- In a large pot, heat the oil over medium-high heat. Add the onion and pepper and cook until they begin to soften, about 2 to 3 minutes. Add the garlic, chili and ginger and cook until fragrant, about 30 seconds. Add the curry paste, fish sauce, and chicken. Pour over the coconut milk and broth. Bring the mixture to a boil and add noodles. Cook, stirring occasionally, until the noodles are tender and stir in cilantro, lime zest and juice.
- Serve immediately or store in the refrigerator for up to 3 days.
