Southwestern Black Bean Salad

Ingredients
- 1 15-oz can black beans, drained and rinsed
- 1 cup corn kernels, cooked
- 1 orange bell pepper, diced
- 1 cup cherry tomatoes
- 1 avocado, pitted and diced
- 1 tbsp vegetable oil
- 1 lime, juice
- ½ tsp chili powder
- ½ tsp ground cumin
- 1 tbsp fresh cilantro
- Salt and pepper, to taste
Instructions
- In a large bowl, combine all of the ingredients and toss well.
- Enjoy immediately topped with the cilantro or store in the refrigerator for up to 4 days. If making this dish ahead of time, don't add the avocado until just before enjoying.
