Smashed Avocado & Shrimp Salad
This fresh Smashed Avocado & Shrimp Salad is protein-packed and ready in just 10 minutes. It starts with a bed of baby spinach and is topped with creamy avocado, crunchy cucumber, shrimp, and loads of flavorful herbs! Enjoy with a fresh lemon wedge for lunch or dinner!

Ingredients
- 2 avocados, pitted and sliced
- 1 lemon, juice
- 1 tbsp fresh dill
- 1 tbsp fresh parsley
- 1 tbsp fresh chives
- Salt and pepper, to taste
- 6 cups baby spinach
- 1 lb cooked peeled shrimp
- 1 English cucumber, diced
Instructions
- In a medium bowl, mash the avocado with a fork. Add the lemon juice, dill, parsley, chives, salt, and pepper and stir well.
- Arrange the spinach in large serving dish. Top it with the cooked shrimp, cucumber, and the avocado mixture.
- Serve immediately with lemon wedges.
