Shredded Carrot Salad

Ingredients
- 4 carrots, peeled and shredded
- 1 tbsp apple cider vinegar
- ½ lemon, juice
- 1 tsp fresh ginger
- ¼ tsp ground cumin
- Salt and pepper, to taste
- 1 tbsp fresh coriander
- 1 tbsp fresh mint
Instructions
- In a large bowl, combine the carrots, apple cider vinegar, lemon juice, ginger, and cumin. Season with salt and pepper to taste.
- Serve immediately topped with the coriander and mint or store in the refrigerator for up to 5 days.
