Sheet Pan Salmon with Broccoli & Cauliflower

Ingredients
- 1 tbsp olive oil
- 1 lemon, juice
- ½ tsp garlic powder
- ½ tsp red pepper flakes
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 4 salmon fillets (4oz)
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Arrange broccoli and cauliflower florets on a sheet pan. Season with olive oil, garlic, red pepper flakes, lemon juice, salt and pepper. Bake for 8 to 10 minutes.
- Remove sheet pan from oven and arrange salmon fillets in the centre of the pan. Season the salmon with olive oil, garlic, red pepper flakes, lemon juice, salt and pepper. Bake for an additional 10 to 15 minutes or until salmon is cooked to your liking.
- Serve immediately or store in the refrigerator for up to 3 days.
