Sautéed Kale

Ingredients
- 1 tsp olive oil
- 1 garlic clove, thinly sliced
- 6 cups green kale
- ¼ cup vegetable broth
- 1 tsp balsamic vinegar
- ¼ tsp red pepper flakes
- Salt and pepper, to taste
Instructions
- In a large skillet, heat the oil over medium-high heat. Add the garlic, and cook until it is fragrant, about 30 seconds. Add the kale and cook for another minute. Add the vegetable stock, balsamic vinegar, and red pepper flakes and continue to cook until the kale is wilted, about 5 minutes. Season with salt and pepper to taste.
- Serve immediately or store in the refrigerator for up to 5 days.
