Sausage, Tomato & Kale Penne

Ingredients
- 1 lb dried penne pasta
- 1 tbsp olive oil
- 4 Italian sausages, casings removed
- 1 yellow onion, diced
- 2 garlic cloves
- ⅛ tsp red pepper flakes
- 1 28-oz can tomato
- ½ cup sliced Kalamata olives
- 3 cups green kale
- ¼ cup fresh parsley
- ¼ cup freshly grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package directions. Drain in a colander and set aside.
- In a large skilllet, heat the oil over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it is no longer pink, 5 to 6 minutes. Add the onion and cook until the onion begins to soften, about 3 minutes. Add the garlic and red pepper flakes and cook until they are fragrant, about 30 seconds. Add the tomatoes, olives, and kale and bring it to a boil. Reduce the temperature to a simmer, and cook, stirring often, until the kale has completely wilted, abotu 5 minutes. Stir in the pasta, parsley, salt, and pepper. Cook until the pasta is hot, about 3 minutes.
- Serve immediately topped with the parsley and Parmesan cheese or store in the refrigerator for up to 3 days.
