Ingredients
- 1 potato, peeled and diced
- ¼ 15-oz can chickpeas, drained and rinsed
- 2 tsp oil
- 1 ½ tsp curry powder
- 1 whole wheat tortilla
- 1 tbsp mango chutney
- ½ cup baby spinach
- ¼ cup frozen green peas
Instructions
- Preheat the oven to 375°F. Line a baking sheet with parchment paper.
- Arrange the potatoes and chickpeas on the baking sheet. Drizzle them with the oil and season them with the curry powder. Toss gently.
- Bake until the potatoes are tender and begin to brown, about 25 to 30 minutes.
- Layer all of the ingredients in the centre of the tortilla. Roll it up.
- Serve immediately.
