Roasted Peppers & Onions

Ingredients
- 1 red bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 Spanish onion, chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- On the baking sheet, toss the peppers and onions with the olive oil, garlic powder, smoked paprika, salt, and pepper. Roast them until they have softened and begin to turn brown, about 30 minutes.
- Serve immediately or store in the refrigerator for up to 5 days.
