Roasted Greek Potatoes

Ingredients
- 6 white potatoes, peeled and cut into wedges
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 lemon, juice
- 1 tbsp Greek seasoning
- Salt and pepper, to taste
- ½ cup chicken broth
- 1 tbsp fresh parsley
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine the potatoes, olive oil, garlic, lemon, Greek seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
- Pour the potatoes into a large baking dish. Add the chicken broth. Bake until the potatoes are tender and golden, about 50 to 60 minutes.
- Enjoy immediately topped with the parsley or store in the refrigerator for up to 5 days.
