Ingredients
Dressing
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Salad
- 2 cups red cabbage
- 2 beet, peeled and shredded
- ½ red onion, thinly sliced
- ¼ cup pomegranate arils
- ¼ cup crumbled goat cheese
Instructions
- In a small bowl, whisk together the oil, balsamic vinegar, mustard, salt, and pepper. Set it aside.
- In a large bowl, toss together the cabbage, beets, red onion, and the dressing.
- Serve immediately topped with the pomegranate arils and goat cheese or store in the refrigerator for up to 3 days.
