Rainbow Tuna Poke Bowl

Ingredients
- 1 tbsp rice vinegar
- 1 tsp soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- 1 lime, juice
- ¾ cup cooked long grain white rice
- ¼ cup red cabbage
- ½ carrot, julienned
- ½ cup shelled edamame
- ½ mango, sliced
- ⅛ tsp sesame seeds
Instructions
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, jalapeño, and lime juice. Set it aside.
- Arrange the rice in a serving bowl. Top it with the red cabbage, carrot, edamame, mango, and tuna. Pour the dressing over the poke bowl just before serving.
- Serve immediately topped with the sesame seeds.
