Quinoa Granola

Ingredients
- 2 cups old-fashioned rolled oats (gluten-free)
- 1 cup quinoa
- ½ cup unsweetened shredded coconut
- 1 tsp ground cinnamon
- ½ tsp salt
- ¼ cup maple syrup
- 3 tbsp coconut oil, melted
- ½ cup pistachios
- 1 cup dried apricot
- ½ cup dried cherries
Instructions
- Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
- In a large bowl, whisk the oats, quinoa, coconut, cinnamon, and salt. Stir in the maple syrup and coconut oil. Transfer the mixture to the baking sheet and bake until the oats are golden, about 20 to 25 minutes, tossing once halfway through. Stir in the pistachios, apricots, and cherries.
- Once completely cooled, serve with yogurt or milk, or store in an airtight container for up to 1 week.
