Potato Scallion Cakes

Ingredients
- 2 cup mashed potatoes
- 2 green onions, sliced
- 2 tbsp breadcrumbs
- 1 large egg
- ⅛ tsp ground cayenne pepper
- 3 tbsp vegetable oil
- ¼ cup sour cream
- 1 tbsp fresh chives
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine the potatoes, onions, breadcrumbs, egg, cayenne pepper, salt, and pepper. Shape the mixture into 8 even patties and set it aside.
- In a large skillet, heat the oil over medium-high heat. Arrange the cakes on the skillet and cook until it is golden, about 3 to 4 minutes. Cook in two batches if necessary. Flip the cake over and continue to cook until the remaining side is golden, another 3 to 4 minutes.
- Serve immediately with the sour cream and chives.
