Potato Pancakes

Ingredients
- 3 cups mashed potatoes
- 1 large egg
- 3 tbsp all-purpose flour
- ½ cup shredded cheddar cheese
- 2 green onions, sliced
- 3 bacons, cooked and chopped (optional)
- ½ tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp oil
- ½ cup sour cream, for serving
Instructions
- In a large bowl, combine all ingredients and mix well. Create 6 to 8 uniform patties.
- In a large nonstick skillet, heat the oil over medium-high heat. Fry the pancakes until they are golden and crispy on both sides and warm throughout, about 3 minutes per side.
- Serve immediately with sour cream.
