Portobello Halloumi Burgers

Ingredients
Burgers
- 4 mushrooms, stems removed
- 1 tbsp oil
- 1 tbsp fresh thyme leaves
- 1 tsp garlic powder
- 8 oz halloumi cheese, sliced
- ground black pepper
Toppings
- 4 hamburger buns
- 1 avocado, smashed
- 1 cup arugula
- 1 tomato, sliced
Instructions
- Drizzle the portobello mushrooms with the oil and sprinkle with the thyme and garlic. Season with pepper to taste. Grill or fry the mushrooms until they release their moisture and are golden, about 10 minutes.
- Meanwhile, grill or fry the halloumi slices until golden on both sides, about 3 minutes per side.
- Place the a mushroom and two slices of halloumi on each bun. Top with the avocado, arugula, and tomato slices.
- Serve immediately.
