- 3 tbsp chia seeds
- 1 tbsp coconut sugar
- ½ cup pineapple
- 1 tbsp unsweetened shredded coconut
- 1 cup unsweetened vanilla almond milk
- In a medium bowl, mix together all of the ingredients. Cover and refrigerate the pudding for at least 2 hours before enjoying.
- Serve immediately or store in the refrigerator for up to 4 days.
