Pear, Pecan & Goat Cheese Salad

Ingredients
Candied Pecans
- 1 tbsp butter
- 1 tbsp brown sugar
- ½ cup pecans
Pear Salad
- 1 pear, cored and thinly sliced
- ½ cup dried cranberries
- ½ cup crumbled goat cheese
- 6 cups arugula
Maple Balsamic Vinaigrette
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- In a frying pan, melt the butter over medium-high heat. Add the brown sugar and stir until it has completely dissolved. Add the pecans and toss until they are evenly coated. Pour nuts onto a parchment-lined baking sheet and allow them to cool completely.
- In a large bowl, top the arugula with the pear, candied pecans, cranberries, and goat cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, mustard, salt, and pepper. Dress the salad just before serving.
- Serve immediately.
