Orange & Fennel Salad

Ingredients
- 3 tbsp olive oil
- ¼ cup orange juice
- 2 tbsp fresh parsley
- Salt and pepper, to taste
- 4 cups arugula
- 3 navel oranges, peeled and sliced
- 1 fennel bulb, thinly sliced
- ½ Spanish onion, thinly sliced
- ⅓ pine nuts, toasted
Instructions
- In a small bowl, whisk orange juice, olive oil, parsley, salt and pepper. Set it aside.
- Arrange the arugula in a large serving dish. Top it with the oranges, fennel, onion, pine nuts, and the dressing.
- Serve immediately.
