Mixed Green Salad

Ingredients
Apple Cider Vinaigrette
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp fresh chives
- 1 tsp fresh dill
- Salt and pepper, to taste
Salad
- 4 cups mixed greens
- ½ English cucumber, seeded and sliced
- ½ cup radish
- 2 tbsp pumpkin seeds
Instructions
- In a small bowl, whisk together the vinaigrette ingredients.
- In a large bowl, toss together the mixed greens, cucumber, radishes, and vinaigrette.
- Serve the salad immediately topped with the pumpkin seeds. Store the salad and vinaigrette separately in the refrigerator for up to 3 days. Toss the salad just before serving.
