Mixed Bean Salad

Ingredients
- 2 15-oz can mixed beans, drained and rinsed
- ¼ lb green beans, chopped and steamed
- 1 cup corn kernels, cooked
- 1 cup cherry tomatoes
- 1 orange bell pepper, diced
- ½ red onion, finely diced
- ¼ cup red wine vinegar
- ¼ cup olive oil
- 2 tbsp fresh parsley
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the mixed beans, green beans, corn, tomatoes, pepper, onion in a large bowl. Add the red wine vinegar, oil, and parsley. Mix well. Season with salt & pepper. For best results, sit for at least an hour before serving or store in the refrigerator for up to 5 days.
