Mediterranean Tuna Lettuce Wraps

Ingredients
- 1 5-oz can water, drained and flaked
- ¼ red onion, finely diced
- ¼ cup Kalamata olives
- ½ cup roasted red peppers
- 1 tbsp olive oil
- ½ lemon, zest and juice
- 2 tbsp fresh parsley
- 6 bibb lettuce leaves
Instructions
- In a large bowl, combine all of the ingredients together. Mix well.
- Serve immediately in the lettuce wraps or store the tuna mixture in the refrigerator for up to 3 days. Assemble the wraps just before serving.
