Ingredients
- 1 lb dried couscous
 - 2 cups baby spinach
 - ½ cup marinated artichoke hearts
 - ½ cup roasted red peppers
 - ¼ cup sun-dried tomatoes
 - ¼ cup Kalamata olives
 - ¼ cup Italian dressing
 - 1 tbsp fresh parsley
 
Instructions
- Cook the couscous according to the package directions. Drain and set aside to cool completely.
 - In a large bowl, combine the couscous, spinach, artichoke hearts, roasted red peppers, sun-dried tomatoes, olives, dressing, and parsley. Toss well.
 - Serve immediately or store in the refrigerator for up to 4 days.
