Mediterranean Chickpea Salad
This beautiful Mediterranean Chickpea Salad couldn't be any easier to make! It is ready in under 10 minutes and stores beautifully in the fridge for up to 4 days making it the perfect recipe for Sunday Meal Prep! It is loaded with fiber and protein and is layered with flavor thanks to the addition of roasted red peppers, Kalamata olives, crumbled feta and a simple yet delicious dressing! Enjoy!

Ingredients
- 2 15-oz can chickpeas, drained and rinsed
- ½ cup roasted red peppers
- 1 cup cherry tomatoes
- 1 English cucumber, diced
- ½ red onion, finely diced
- ¼ cup sliced Kalamata olives
- ¼ cup crumbled feta cheese
- 2 tbsp fresh parsley
- 2 tbsp olive oil
- 2 tbsp white wine vinegar
- ½ lemon, juice
- Salt and pepper, to taste
Instructions
- In a large mixing bowl combine all of the ingredients. Stir well.
- Enjoy immediately or store in the refrigerator for up to 4 days.
