Mango Shrimp Lettuce Wraps

Ingredients
- ¼ lb cooked peeled shrimp, diced
- 1 mango, diced
- ¼ English cucumber, diced
- ¼ red onion, finely diced
- 1 tbsp fresh cilantro
- 1 red chili pepper, seeded and minced (optional)
- 1 lime, juice
- Salt and pepper, to taste
- 6 bibb lettuce leaves
Instructions
- In a large bowl, combine the shrimp, mango, cucumber, red onion, cilantro, chili, and lime juice. Season with salt and pepper and toss well.
- Divide the mixture between the lettuce wraps.
- Serve immediately.
