Lime & Cilantro Rice

Ingredients
- 1 cup long grain white rice
- 2 cups water
- 1 garlic clove, minced
- 2 limes, zest and juice
- 2 tbsp fresh cilantro
- Salt and pepper, to taste
Instructions
- In a medium saucepan, bring the rice, water, and garlic to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 15 minutes. Turn off the heat and let it rest, covered, for 5 minutes. Stir in the fresh lime juice and cilantro.
- Serve immediately or store in the refrigerator for up to 4 days.
