Honey Lime Chicken

Ingredients
- 6 chicken drumsticks
- 1 tbsp vegetable oil
- 3 limes, juice
- ¼ cup soy sauce
- ¼ cup honey
- 2 garlic cloves, minced
- 1 tsp fresh ginger
- Salt and pepper, to taste
Instructions
- Season the chicken with salt and pepper.
- Heat the oil in a skillet over medium-high heat. Add the chicken and cook until it is golden brown on all sides, 8 to 10 minutes. Remove the chicken from the skillet and set it aside.
- Reduce the heat, and in the same skillet, add the soy sauce, honey, lime juice, garlic, and ginger. Stir well and return the chicken to the pan. Continue to cook the chicken, covered, until it reaches an internal temperature of 165ºF, 8 to 10 minutes. Flip the chicken a few times while cooking to coat it in the sauce.
- Serve immediately with fresh cilantro and lime wedges or store it in the refrigerator for up to 3 days.
