Ingredients
- 2 tbsp butter
- 1 yellow onion, diced
- 2 celery ribs, sliced
- 2 carrots, sliced
- 2 garlic cloves, minced
- 2 tsp fresh thyme leaves
- 2 cups shredded cooked chicken
- 1 cup dried orzo
- 2 cups chicken broth
- 2 tbsp fresh parsley
- Salt and pepper, to taste
Instructions
- In a large pot, melt the butter over medium-high heat. Add the onion, celery, and carrots to the pot. Cook, stirring often, until they begin to soften, about 3 to 5 minutes. Add the garlic and thyme and cook, stirring, until they become fragrant, about 30 seconds. Stir in the chicken, orzo, and chicken broth. Season with salt and pepper to taste. Bring the mixtue to a boil then reduce the heat to medium-low and cover the pot. Continue to cook, stirring often, until all of the liquid has been absorbed, about 8 minutes. Stir in the parsley.
- Serve immediately or store in the refrigerator for up to 3 days.
