Hawaiian Breakfast Pita

Ingredients
- 1 tsp oil
- ¼ cup deli ham
- ¼ cup pineapple
- Salt and pepper, to taste
- 3 large eggs
- 1 tbsp milk
- ¼ cup shredded mozzarella cheese
- 1 green onion, sliced
- ½ whole wheat pita
Instructions
- In a large frying pan, heat the oil over medium-high heat. Cook the ham and pineapple, stirring often, until pineapple begins to caramelize, about 4 to 5 minutes.
- In a medium bowl, whisk together the eggs, milk, salt, and pepper. Add the egg mixture to the frying pan. Cook, stirring, until the eggs begin to set, about 2 minutes. Stir in the mozzarella cheese and green onion. Cook until the cheese melts, about 1 minute. Stuff the pita with the egg mixture.
- Serve immediately.
