Ham & Swiss Baked Gnocchi

Ingredients
- 2 tbsp butter
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 8 oz deli ham, diced
- 1 tbsp all-purpose flour
- 1 cup cream
- 1 tbsp Dijon mustard
- 1 cup shredded Swiss cheese
- 1 cup green peas
- 1 lb gnocchi
- 1 tbsp fresh parsley
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375ºF.
- In a large skillet, melt the butter over medium-high heat. Add the onion and cook, stirring occasionally, until it begins to soften, about 3 minutes. Stir in the garlic and cook until it is fragrant, about 30 seconds. Add the ham and continue to cook until the ham begins to brown, about 4 to 5 minutes. Stir in the flour and cook for another minute. Add the cream and Dijon mustard. Mix well. Stir in half of the Swiss cheese and cook until it has completley melted, about 1 to 2 minutes. Stir in the green peas and gnocchi. Transfer the mixture into an oven-safe baking dish and top with the remaining Swiss cheese. Bake until the cheese is golden, about 10 minutes.
- Serve immediately topped with the parsley or store in the refrigerator for up to 3 days.
