Grilled Halloumi & Strawberry Salad

Ingredients
Dressing
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
- Salt and pepper, to taste
Salad
- 8 oz halloumi cheese, sliced
- 6 cups mixed greens
- 1 cup strawberries
- 1 avocado, pitted and sliced
- 2 tbsp fresh basil
Instructions
- In a small bowl, whisk together all of the dressing ingredients.
- Preheat the grill to medium-high heat. Arrange the halloumi slices on the grill. Cook until the slices begin to brown and grill marks appear on both sides, 1 to 2 minutes per side. Once golden, remove the halloumi from the heat and assemble the salad.
- In a serving dish, arrange the mixed greens. Top with the halloumi, strawberries, and avocado. Serve with the dressing on the side.
- Serve immediately.
