Greek Yogurt Pancakes
These delicious pancakes will have everyone begging for seconds! They feature oat flour in place of all-purpose and lots of extra protein thanks to the addition of rich, creamy Greek yogurt. Serve them with a drizzle of maple syrup or add some nut butter and berries for a nutritious breakfast you can feel really good about.

Ingredients
- 1 cup oat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon
- 1 cup plain Greek yogurt
- 3 tbsp maple syrup
- 2 large eggs
- 1 tbsp butter
Instructions
- In a large bowl, whisk together the ground oats, baking powder, baking soda, and cinnamon. Add the Greek yogurt, maple syrup and eggs. Mix until combined.
- Melt the butter in a large skillet over medium heat. Ladle 2 or 3 pancakes into the skillet. Cook until air pockets begin to form on the surface, about 2 to 3 minutes. Flip the pancakes and continue to cook until golden brown, about a minute.
- Serve immediately.
