Ingredients
Mediterranean Cauliflower Salad
- 1 cauliflower, cut into small florets
- 1 cup halved cherry tomatoes
- ½ English cucumber, diced
- 1 cup crumbled feta cheese
- ¼ cup pitted Kalamata olives, halved
- 2 tbsp olive oil
- 1 lemon, juice
- ½ tsp dried oregano
- Salt and freshly ground black pepper
Greek Salmon
- 1 tsp garlic powder
- ½ tsp dried oregano
- ½ tsp dried parsley
- ½ tsp dried dill
- 1 lb fresh salmon, cut into 1-inch cubes
- 1 tbsp oil
- 1 lemon, juice
- Salt and freshly ground black pepper"
Instructions
- To make the salad, in a large bowl, combine the cauliflower, tomatoes, cucumber, feta cheese, and olives. Add the olive oil, lemon juice, and dried oregano. Season with salt and pepper to taste. Toss the salad until it is evenly coated with the oil and lemon juice.
- To make the salmon, in a small bowl, whisk together the garlic powder, oregano, parsley, and dill. Season with salt and pepper to taste. Sprinkle the mixture over the salmon and toss to evenly coat.
- In a large skillet, heat the oil over medium-high heat. Arrange the salmon in the skillet in a single layer. Cook in several batches if necessary. Cook, flipping occasionally, until it is golden brown on all sides, about 4 to 5 minutes. Once the salmon is cooked through, squeeze the lemon juice over the top and remove from the pan and set it aside.
- Serve the salad immediately with the salmon, or store in the refrigerator for up to 3 days.
