Ingredients
Greek-Inspired Veggie Burgers
- 1 15-oz cans cannellini beans, rinsed and drained
- 2 garlic cloves, minced
- ½ red onion, grated
- ½ red bell pepper, finely diced
- 2 tsp Greek seasoning
- ½ cup crumbled feta cheese
- ½ lemon, zest and juice
- 2 tbsp fresh parsley
- Salt and pepper, to taste
- 1 cup breadcrumbs
- 1 large egg
Toppings
- 4 hamburger buns
- ¼ tzatziki sauce
- ½ cup romaine lettuce
- 1 tomato, sliced
Instructions
- In the bowl of a food processor combine white beans, garlic, red onion, red pepper, lemon zest, lemon juice, Greek seasoning, salt, pepper, feta cheese, parsley, breadcrumbs and egg. Pulse until the mixture resembles coarse crumbs. Form four to six uniform patties. Grill the burgers on both sides until they have heated through. Place the grilled burgers on a buns and garnish with tzatziki, lettuce, tomato and onion.
- Serve immediately or store the patties in the refrigerator for up to 5 days.

What is the amount/measurement for the white beans? Not sure how much to use. Are they drained and rinsed? Are chickpeas ok to use? Thanks!
Hello. Thanks so much for noticing the typo. This recipe calls for 2 15-oz cans of cannellini beans (also known as white kidney beans). You could definitely swap in chickpeas instead 🙂
