Fattoush Salad

Ingredients
- ¼ cup olive oil
- 1 lemon, juice
- 1 garlic clove, grated
- ½ tsp ground sumac
- Salt and pepper, to taste
- 6 cups romaine lettuce, chopped
- 1 English cucumber, seeded and sliced
- 2 cups cherry tomatoes
- 6 radishes, thinly sliced
- ½ red onion, thinly sliced
- 2 cups pita chips
- ¼ cup fresh parsley
- ¼ cup fresh mint
Instructions
- In a small bowl, whisk the olive oil, lemon juice, garlic, sumac, salt, and pepper.
- In a large bowl, combine the lettuce, cucumber, tomatoes, radishes, red onion, pita chips, parsley, and mint. Toss the salad with vinaigrette.
- Serve immediately or store in the refrigerator for up to 4 days. Only add the pita chips and dressing just before serving.
