Falafel Burger

Ingredients
Burgers
- 2 15-oz can chickpeas, drained and rinsed
- ½ red onion, chopped
- 2 garlic cloves, minced
- 1 lemon, zest and juice
- ¼ cup fresh parsley
- 1 tsp ground cumin
- ½ tsp ground coriander
- Salt and pepper, to taste
- ½ cup breadcrumbs
- 1 large egg
- 1 tbsp olive oil
To serve
- 4 hamburger buns
- 1 tomato, sliced
- ½ cup romaine lettuce
- ¼ cup tzatziki sauce
Instructions
- Add all of the ingredients, except the olive oil into a food processor. Gently pulse until all of the ingredients are combine and look like coarse crumbs. Don’t over mix or you’ll end up with hummus.
- Shape the mixture into 4 patties. Brush each side with the olive oil and then place the patties in the refrigerator or freezer for 15 to 20 minutes before grilling.
- Grill over medium-high heat, until grill marks form and they are heated through, about 3 to 4 minutes per side.
- Serve immediately with tomato, onion, and tzatziki sauce or store in the refrigerator for up to 3 days.
