Crunchy Tuna Pita Pockets

Ingredients
- 1 5-oz can tuna in water
- ¼ English cucumber, diced
- 2 celery ribs, sliced
- ½ red bell pepper, diced
- ¼ red onion, finely diced
- 1 tbsp olive oil
- ½ lemon, juice
- ½ cup green leaf lettuce
- 1 whole wheat pita, cut in half
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the tuna, cucumber, bell pepper, celery, onion, oil, and lemon juice. Season the mixture with salt and pepper to taste.
- Fill each half of the pita with the lettuce and the tuna mixture.
- Serve immediatley.
