Crunchy Rainbow Slaw

Ingredients
Dressing
- 1 mango, pitted and diced
- 1 lime, zest and juice
- 1 tsp fresh ginger
- 1 tsp agave syrup
- ⅛ tsp red pepper flakes
- Salt and pepper, to taste
Slaw
- 2 cups green kale
- 1 cup broccoli florets
- 1 carrot, peeled and shredded
- ½ cup red cabbage
- ¼ cup fresh cilantro
- 3 green onions, sliced
- ¼ cup chopped roasted cashews
Instructions
- Blend all of the dressing ingredients in a blender until smooth. If needed, add a tablespoon of water at a time to thin the sauce until it reaches your desired consistency. Set it aside.
- In a large bowl, toss together the kale, broccoli, carrot, cabbage, cilantro, green onion, and the dressing.
- Serve immediately topped with the cashews or store in the refrigerator for up to 3 days.
