Crunchy Noodle Salad

Ingredients
Dressing
- 1 tbsp sesame oil
- 1 tbsp tamari
- 2 tbsp rice vinegar
- 2 tsp agave syrup
- 1 garlic clove, grated
- ½ tsp fresh ginger
Salad
- 12 oz rice noodles, cooked according to package directions
- ½ cup red cabbage
- ¼ English cucumber, julienned
- 1 carrot, peeled and julienned
- 2 green onions, sliced
Instructions
- In a small bowl, whisk together all of the dressing ingredients and set it aside.
- To assemble the salad, toss all of the ingredients together and drizzle with the dressing.
- Serve immediately or store in the refrigerator for up to 3 days.
