Cranberry Pistachio Energy Bites

- ¾ cup dates, pitted
- ½ cup pistachios
- ¼ cup dried cranberries
- 1 tbsp unsweetened shredded coconut
- Add the dates to the bowl of a food processor. Pulse for 15 to 20 seconds, until the dates begin to break down. Add the pistachios, cranberries, and coconut. Blend until the mixture resembles coarse crumbs. Remove the blade. Roll the mixture into one inch balls.
- Serve immediately or store in the refrigerator for up to one week.
