Ingredients
- 1 tbsp coconut oil
- 1 tbsp unsweetened shredded coconut, toasted
- 1 tsp curry powder
- ½ tsp ground ginger
- 1 lime, zest and juice
- 1 tbsp fresh cilantro
- 8 cups air-popped popcorn
- salt
Instructions
- In a small saucepan, heat the coconut oil, shredded coconut, curry powder, ginger, lime zest, lime juice, and coriander until it becomes fragrant, about 1 minute. Pour the mixture over the popcorn and season it liberally with salt. Let it dry for 10 to 15 minutes.
- Serve immediately.
