Classic Gazpacho

Ingredients
- 5 roma tomatoes, seeded and diced
- 1 English cucumber, seeded and diced
- 1 red bell pepper, diced
- 1 slice bread, crust removed
- ½ yellow onion, diced
- 1 garlic clove
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- ¼ tsp ground cumin
- ½ cup croutons
- Salt and pepper, to taste
Instructions
- Add the tomatoes, cucumber, bell pepper, onion, bread, and garlic to the blender. Season with the red wine vinegar, olive oil, cumin, salt, and pepper. Blend the mixture until it is smooth.
- Serve immediately topped with some croutons or store in the refrigerator for up to 3 days.
